Having no bread with Paleo is ok with me….. well now it is, sure as hell wasn’t at first but its gotten much easier. But we still eat with “normal” people and they will expect some sort of bread for that huge holiday meal you’re already slaving and stressing over. Luckily, I have something to fill that need!

The Paleo Blue Corn Muffin! It’s based on Bobby Flay’s recipe that is featured at the MESA Grill. Which is fantastic if you’ve never tried it, great southwestern food.

Of course in Paleo we don’t eat milk, wheat, or corn. That’s right, no corn! It’s a grain! But you already knew that ’cause you’re fancy. So I adapted his recipe and I think it turned out great! Give them a try and let me know what you think! Better yet, sneak them into your holiday meal as a healthy alternative and then let me know what your guests think, bet they won’t be able to tell. My friends who were over for the the Halloween Feast didn’t!

Paleo Blue Corn Muffins (Bobby Flay’s Recipe)

A Paleo take on the famous Blue Corn Muffins from the MESA Grill. These are just as delicious and are 100% Paleo and therefore gluten and dairy free!

Whats in it?

  • 1/2 cup Sweet Potato (diced)
  • 2 tablespoons Cilantro (fresh and finely chopped)
  • 2 tablespoons Honey
  • 2 cups Almond flour
  • 1 1/3 cup Coconut milk
  • 4 large Eggs (try omega-3 enhanced)
  • 1 medium Red Bell Pepper (finely diced)
  • 2 medium Jalapeño peppers (finely diced)
  • 6 tablespoons Unsalted butter (preferably grass-fed)
  • 1 medium Red onion (finely diced)
  • 4 cloves Garlic (finely diced)
  • 1 cup Coconut flour
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Baking soda
  • 4 teaspoons Kosher salt

Note

Use a ice cream scooper to easily fill the muffin tins and get even amounts of batter in all of them!

Make it!

1 Preheat the over to 400.

Chop the garlic and onion.

Combine with the butter in a pan over medium heat. Cook until transparent

Prep your remaining fresh ingredients. The cilantro, sweet potato, red pepper, jalapeno, and eggs

Slice and dice!

Combine in a large bowl and add the honey, salt, and coconut oil.

Mix until you have a even consistency. Should feel pretty thick.

Add to your muffin tins. I just got some of these silicon sleeves and they are awesome! Nothing sticks so they don't need to be oiled. If you using a normal muffin tray, use coconut oil instead of butter. I had 12 tins but the recipe could have made 4-6 more.

Bake for 15-20 minutes depending on how moist you would like them. I tend to let them bake longer as some Paleo baking with the coconut flour can be very moist and dense.

Let cool for 5-10 and enjoy!
